Chef Sualua will present 'P.A.U.S.E.D',' a checklist to help when temporarily shutting down your foodservice operation, with phased, safe re-opening guidelines, and Dietary challenges and rethinking your Food Service during the off-seasons.

Chef Sualua Tupolo, has an A.S. in Culinary Arts and is the Director/Executive Chef of the Dining Service for Southwestern Adventist University. Chef Tupolo has served as the Exclusive Chef for three governors of American Samoa, preparing meals for special government functions, legislators, and heads of state. He had the honor of presenting a cooking class for the House of Representatives on Capitol Hill and won a Telly Award for the 'Cooking Vegetarian' program featured on the Hope Channel.

Does food make a lasting impression?  Can vegetarian meals be appealing to everyone?  What ministry opportunity is found in food service?  Culinary professionals and camp managers alike will benefit from this presentation by Darla Roe, the Food Service and Camp Director at Camp Ida-Haven in McCall, Idaho.  In the kitchen, Darla’s passion is to serve high-quality, attractive food in a timely manner.   This in turn provides an opportunity to minister to guests—and staff—with more than just food.  

Join this session to hear Darla’s experience of camp ministry through the kitchen and the things that make it most effective.  The discussion will include:

Darla Roe has spent the past 29 years as both Food Service and Camp Director at Camp Ida-Haven in McCall, Idaho.  Until recently, Darla and her husband have been the only full-time employees, working year-round to provide food service and group management, clean and upkeep the facilities, oversee the maintenance, and manage new building projects.  They also created the camp’s current summer program and hire the summer staff.   In the kitchen, Darla’s passion is to serve high quality, attractive food in a timely manner.  In her free time, Darla enjoys puzzles, visiting Presidential Libraries and doting on her dachshund.
